Stuffed Mushrooms
Appetizers for 10
2/3 cup low-fat (1%) cottage cheese
2 oz part skim mozzarella, grated
1 tsp lemon juice
1/4 tsp dill
1 clove garlic, minced
30 medium fresh mushrooms (about 1 1b), cleaned and stemmed
Paprika
Fresh herb sprigs
Mix cheeses, lemon juice, dill, and garlic. Spoon 1 teaspoon cheese mixture into each mushroom cap. Sprinkle lightly with paprika. Bake at 425° until cheese is melted and beginning to brown. Garnish with herb sprigs.
