Workday Pancakes

Serves 2

1 C whole-wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 C skim milk

Mix flour, baking powder, and baking soda. Stir in milk, mixing well. (Add a little more flour or milk if the batter is too thin or too thick. ) Pour 1/4 C of batter onto a hot nonstick griddle or skillet; repeat with remaining batter to make 6 pancakes. When bubbles appear and begin to break, and when edges are dry, turn pancake and brown on the other side.


• Fresh or dried fruit and spices to taste – such as blueberries, mashed bananas, puréed pumpkin, chopped dates or apricots, or cinnamon and raisins – can be stirred into the batter.
