Chicken & Bananas

Serves 4

4 boneless, skinless chicken breasts, 4 oz each
2 T flour
3 tsp curry powder
2 bananas, peeled and halved
2 C hot cooked brown rice, cooked with the juice of 1/2 lime

Drop the chicken, flour, and curry powder into a plastic bag or covered container and shake until the meat is coated; remove from bag and discard excess flour. Brown the chicken on both sides in a skillet; reduce heat and cook, covered, until tender, about 15 minutes. Add the bananas and cook for 5 minutes. Serve over lime rice.

Suggestion:

  • Baked Chicken with Bananas: Place a layer of sliced sweet potato in a medium casserole dish lightly coated with vegetable spray. Place chicken on top and cover with a second layer of sweet potato. Bake at 375° for 30 to 40 minutes. Gently stir in banana (cut in 1-inch chunks) and return to oven for 5 minutes.
