Dijon Vinaigrette

Serving size: 1 T

1 T Dijon mustard
Freshly ground black pepper to taste
1/4 C lemon juice
2 T water
2 T sherry vinegar
2 T olive oil
1 shallot, minced
1 clove garlic, crushed

Shake all ingredients briskly in a covered container until well blended. Serve immediately.
