Orange Dressing

Serving size: 1 T

3/4 C plus 2 T unsweetened orange juice
2-3/4 tsp cornstarch
1 tsp safflower oil
2 tsp honey
1/2 tsp almond extract

Simmer all ingredients until slightly thickened, stirring frequently. Cool to room temperature; cover and chill. Makes 3/4 C.


  • Serve as a dressing for fruit salad or as a sauce for poached fruit, cake, or frozen yogurt.
  • Add finely chopped orange segments.
  • Omit almond extract; add a squeeze of lemon juice to taste.
  • Omit honey; stir in artificial sweetener to taste before serving.
  • Omit almond extract; add Grand Marnier, brandy, bourbon, or rum to taste.
  • Omit almond extract; add finely chopped fresh or crystallized ginger and serve over hot cooked carrots.
  • Use to marinate or baste chicken or fish (will add flavor but cannot tenderize).
