Chicken Cacciatore

Serves 8

2 C thinly sliced onion
1/2 C chopped green pepper
2 cloves garlic, crushed
8 skinless chicken breast halves
1 can (16 oz) low-sodium tomatoes, drained
1 can (8 oz) low-sodium tomato sauce
4 oz fresh mushrooms, sliced
1/4 tsp oregano

Cook onion, green pepper, and garlic in 1/4 C water over medium heat until tender. Add remaining ingredients and simmer for 40 minutes.


  • Serve with linguini.
