Blueberry-Banana Pancakes*

Serves 12

1-1/2 C rolled oats
2-1/2 C skim milk
2 egg whites
1 C whole-wheat flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 very ripe banana, well mashed
1/2 C blueberries

Mix oatmeal, milk, and egg whites; let stand for 30 to 60 minutes. Stir the flour, baking powder, baking soda, and cinnamon together. Mix dry ingredients and banana with oatmeal-milk mixture, stirring just until the dry ingredients are moistened. Pour 5-inch circles of batter onto a hot nonstick griddle or skillet. Immediately sprinkle a spoonful of blueberries on top of each pancake.

Turn each pancake when the top is bubbly and a few bubbles have broken.
