Smart Apples

Serves 8 (5 chips per serving)

2 C unsweetened apple juice
1 cinnamon stick
2 medium apples, unpeeled, cored, sliced into thin rings (about 20 per apple)

Bring apple juice and cinnamon to a boil. Simmer the apples in the juice for 4 to 5 minutes, or until they are translucent. Remove and pat dry with a paper towel. Spread apple rings in a single layer on a wire rack and bake at 250° until lightly browned, about 30 to 40 minutes. Cool on a wire rack; store in an air-tight container.
