Tuna Tacos

Serves 6

1 small red onion, diced
1 to 2 cloves garlic, minced
2 cans (6-1/8 oz) solid white tuna packed in water, rinsed
1/2 C salsa
1 T minced parsley or cilantro
1 tomato, diced
1/2 C grated low-fat cheddar cheese
1/2 C shredded romaine lettuce
6 whole-wheat tortillas

Sauté onions and garlic. Add tuna, salsa, and parsley; cook until warm.

Warm tortillas in a nonstick pan until soft, about 15 seconds. Top each tortilla with tuna mixture, tomato, cheese, and lettuce. Fold the tortilla in half to make a soft taco. Serve immediately.

Suggestion:

  • Corn tortillas can be substituted for the whole-wheat tortillas.
