Sweet Potato Pie

Serves 8

4 egg whites, lightly beaten
1/2 C sugar
1/4 C brown sugar
1 T grated orange rind
1 C unsweetened orange juice
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp nutmeg
2 tsp margarine, melted
2 C cooked, mashed sweet potato
1/2 C skim milk
Basic Pie Crust

Beat egg whites with sugars, orange rind, juice, spices, and margarine. Beat in sweet potato; blend in milk. Pour into pie pan lined with Basic Pie Crust.

Bake at 350° for 1 hour or until a knife inserted in the center comes out clean.

Suggestions:

  • Graham Cracker Crust may be substituted for the Basic Pie Crust.
  • Grated orange rind or cinnamon can be added to the dry ingredients when making either type of pie crust.
