Whole-Wheat Tortillas

Serves 10

2 C whole-wheat flour
1 C all-purpose flour
1 tsp baking powder
1/4 C canola oil
1C very hot water (tap water is not hot enough)

Mix dry ingredients; stir in oil. Add hot water and stir with a fork until dough can be kneaded. Knead for 5 minutes. Form dough into 10 balls. Roll balls into flat, round tortillas, using a floured rolling pin and working on a lightly floured surface. Cook tortillas over medium-high heat on a griddle or in an electric skillet for about 1 minute on each side, turning them over when bubbles appear.
