Basic Biscuits

Serves 8

2-1/4 C all-purpose unbleached flour, divided
1 C plain nonfat yogurt
1 tsp sugar
2 tsp baking powder
1/2 tsp baking soda

Mix 1 C of flour with the yogurt; sprinkle sugar on top. Cover and let stand in warm place overnight.

Mix remaining 1-1/4 C flour, baking powder, and baking soda, Stir into yogurt mixture. On a lightly floured surface, pat the dough into an 8 × 4-inch rectangle. Cut into 8 squares. Transfer to a nonstick baking sheet. For crusty biscuits, leave at least 2 inches between biscuits, Bake at 425° until golden, about 12 minutes.

Suggestions:

  • Add herbs, grated cheese, or ground nuts to the dry ingredients,
  • Stir raisins, currants, finely chopped dried fruit, blueberries, or lightly sugared chopped raw cranberries into the dry ingredients.
  • For drop biscuits, add a little extra liquid to the batter; drop by spoonfuls onto the baking sheet and bake as directed.
  • Substitute whole-wheat flour for up to half of the all-purpose flour.
