Rice Pudding

Serves 8

2 C cooked white rice
1 qt skim milk
1/4 C sugar
1/2 C egg substitute
1/2 tsp vanilla
1/2 C raisins

Combine rice, skim milk, sugar, and egg substitute. Stir in vanilla and raisins. Pour into a nonstick baking dish. Bake at 350° until firm, about 30 minutes.


  • For a creamier pudding, use a short-grain rice.
  • Sprinkle with cinnamon before serving.
  • Spoon Melba Sauce over each serving.
  • Use a flavored sugar, such as vanilla, lavender, or lemon.
