Shrimp with Black Beans

Serves 12

2 lb medium shrimp, peeled and deveined
4 cloves garlic, minced
Red chili powder to taste
4 C cooked black beans, rinsed and drained
2 medium red bell pepper, seeded and finely diced
8 scallions, thinly sliced
4 medium oranges, peeled and sectioned
2 T fresh ginger root, peeled and finely chopped
Citrus Vinaigrette

Sauté the shrimp, garlic, and chili powder over medium-high heat for 2 to 3 minutes, or until the shrimp is opaque. Let the shrimp cool for 15 minutes.

Toss the shrimp with the black beans, bell pepper, scallions, oranges, and ginger. Serve with Citrus Vinaigrette on the side.


  • Serve over hot rice.
