Chunky Peanut Soup

Serves 12

1 small onion, diced
2 stalks celery, diced
3 Tall-purpose flour
2 qt low-sodium chicken broth
2 tsp curry powder
2 cloves garlic, minced
1 tsp ginger
1/4 tsp cayenne pepper
1 jar (8 oz) unsalted old-fashioned chunky peanut butter
1 T lemon juice

Sauté onion and celery until soft, about 5 minutes. Gradually stir in chicken broth and simmer 30 minutes. Mix flour with 1/2 C of the hot chicken broth; stir into the pot of soup. Stir in curry powder, garlic, ginger, cayenne pepper, peanut butter, and lemon juice. Simmer gently for 15 minutes. Serve hot.


  • Use as a topping for baked potatoes or over rice.
  • Strain soup and use as a peanut sauce for chicken or vegetable recipes.
