Spicy Avocados

Serving size: 2 T

1 clove garlic, coarsely chopped
1 onion, diced
1/2 medium red pepper, cored, seeded, diced
1/2 medium green pepper, cored, seeded, diced
1 jalapeño pepper, cored, seeded, quartered
1 tomato, peeled, seeded, diced
2 T olive oil
2 T white wine vinegar
1-1/2 C diced Florida avocado

Purée the garlic, onion, red and green peppers, hot pepper, and tomato in a food processor until smooth. Cook the puréed mixture in hot oil, stirring for 2 minutes. Stir in the vinegar and salt; reduce heat and continue cooking for 20 minutes. Cool to room temperature. Gently stir in the avocado.


  • Serve with unsalted crackers or as a dip for raw vegetables.
