Basmati Rice

Serves 4

2 C water
1 C Basmati rice, very well rinsed and drained
1/3 C minced scallions
3 T minced fresh parsley

Bring water to a boil and stir in rice. Reduce heart and simmer, covered, for 15 minutes. Remove pan from heat and let stand covered for 5 minutes. Stir in scallions and parsley. Serve promptly.
