Carrots in Beer

Serves 4

4 large carrots, cut into long thin slices
1 C dark beer
1 tsp sugar
1 T chopped parsley
Freshly ground black pepper to taste

Simmer carrots in beer until tender, stirring frequently. Stir in sugar, parsley, and pepper. Cook for about 2 minutes. Serve hot.
