Fruited Oatmeal

Serves 4

1-1/2 C water
1-1/3 C rolled oats
1/4 C dried apricots, chopped
1/2 C dates, chopped
1 small apple, peeled, cored, and chopped
1/4 C pecans, chopped

Bring water to a boil in a saucepan. Add oats and cook over medium heat for 1 minute, stirring constantly. Stir in dried fruit and apple. Cover and cook over low heat for 5 minutes, stirring occasionally, until desired consistency is reached. Stir in nuts.


  • Serve with skim milk and honey.
  • Other dried fruits, such as figs, raisins, currants, pears, or prunes, may replace part or all of the apricots and dates.
