Apple Brown Betty

Serves 8

1/2 C sugar
1 tsp cinnamon
1 T grated lemon rind
4 C diced apples
1/2 C brown sugar
4 C cubed cinnamon raisin bread
2 T lemon juice
1/2 C water
1/2 C bread crumbs
1/4 C soft tub margarine, melted

Combine sugar, cinnamon, and lemon rind; set aside. Spread one-third of the apples in a 1-1/2-qt casserole dish. Sprinkle one-third of the brown sugar over the apples. Top with half the bread and sprinkle with half the cinnamon-sugar.

Repeat layers of apple, brown sugar, bread cubes, and cinnamon-sugar. Mix lemon juice with water and sprinkle over top. Spread the remaining apples and brown sugar on top; sprinkle with a mixture of the bread crumbs and margarine. Bake, covered, at 350° for 30 minutes. Remove cover and bake for 10 to 15 minutes, or until topping is golden brown. Serve warm.
