Banana Bread

Serves 16

1 C whole-wheat flour
1/4 C all-purpose flour
1/2 C oat bran
1-1/4 tsp baking powder
1-1/4 tsp baking soda
1/3 C sugar
1/3 C brown sugar
1/3 C margarine
2 egg whites
2 T skim milk
1 C mashed ripe banana

Stir together flours, oat bran, baking powder, and baking soda. Cream both sugars with margarine; add eggs and milk, beating until smooth. Add flour mixture and banana and beat until smooth. Spread batter in a nonstick 8 × 4 loaf pan. Bake at 350° for 60 to 65 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Cool in the pan for 10 minutes. Remove from the pan and cool on a wire rack. Makes 1 loaf.
