Grilled Grouper Tangerine

Serves 4

1/4 C frozen unsweetened tangerine concentrate, thawed
2 T dry vermouth
1 tsp canola oil
1/2 tsp dried rosemary
1/4 tsp dried thyme
1/4 tsp pepper
1 lb grouper fillets

Combine all ingredients except fish. Pour over the fish and marinate, covered, for 2 hours. Remove fish from marinade and grill the fish until it flakes easily with a fork. Boil the marinade and use for basting during cooking.


  • Orange juice concentrate can be substituted for the tangerine concentrate.
  • Fish can be broiled or pan-fried.
