Pineapple-Strawberry Chiffon

Serves 4

3/4 C canned unsweetened crushed pineapple, drained
1/4 C sliced fresh strawberries
1 C evaporated skim milk
1 T lemon juice
1 tsp vanilla extract
1 pks (1/4 oz) unflavored gelatin dissolved in 2 I water
1 tsp grated lemon rind
2 T sugar

Purée pineapple, strawberries, milk, lemon juice, and extract in blender. Stir in gelatin, lemon rind, and sugar. Pour into 4 dessert dishes and chill until set.


  • Do not use fresh or frozen pineapple with gelatin; it contains an enzyme that will keep the gelatin from setting.
  • Other fruits can be substituted for the pineapple and/or the strawberries.
