Orange Raisin Rice

Serves 4

1/3 C minced onion
1 C rice
2 T yellow raisins
1/4 C sliced almonds
1 C low-sodium chicken broth
1 T finely grated carrot
1 tsp grated orange rind
1/2 C orange juice
Freshly ground black pepper

In a medium saucepan, sauté the onion in cooking spray until soft. Add rice, raisins, almonds, broth, carrot, orange rind, and orange juice. Bring to a boil; reduce heat and simmer, covered, until all liquid is absorbed, about 20 minutes. Season to taste with pepper. Lightly fluff rice with a fork and serve hot.
