Pickle Soup

Serves 4

1/2 lb raw chicken breast, cubed
1/2 C chopped celery
1/3 C chopped carrot
2/3 C chopped onion
1 C diced potato
1 clove garlic, minced
1/4 tsp salt
1/4 tsp black pepper
1 tsp minced parsley
4 C water
1/3 C grated low-sodium dill pickle

Simmer all ingredients except pickle until tender. Just before serving, stir in
grated pickle. Serve hot.
