Seaside Chili

Serves 4

1-1/2 C chopped onions
1/2 C chopped celery
2 C peeled, seeded, and chopped tomatoes, fresh or canned
1-1/4 1b minced raw clams
1/3 C clam juice, reserved from raw clams
1 C water
1/2 tsp ground cumin
3 cloves garlic, minced
3 T chili powder
1 can (1-Ib) butter beans, undrained
1/2 C zucchini, grated
2 C cooked small seashell macaroni

Sauté onions and celery until tender. Add tomatoes and cook 1 minute. Stir in clams, juice, water, and spices. Simmer for 1 hour. Add beans and zucchini; simmer, covered, for 15 minutes. Top each serving with seashell macaroni.

Suggestions:

  • Bottled clam juice or fish stock may be used to supplement or to replace the fresh clam juice.
  • Pinto or kidney beans may be substituted for the butter beans.
