Honey Plum Crisp

Serves 6

18 black plums, halved, cored, and thinly sliced
3 T unbleached flour
2 T honey
Grated rind of one-half lemon
1/4 C dark brown sugar
1/2 C unbleached flour
1/4 C whole-wheat flour
1/8 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 C margarine, cut up and chilled
2 T coarsely chopped pecans
2 T currants

Toss the plums, 3 T flour, honey, and lemon rind. Spread plums in a 2-1/2 qt baking dish.

For the topping, cut the sugar, flours, nutmeg, cinnamon, and margarine together with a pastry knife until the margarine is the size of small peas. Stir in the pecans and currants. Sprinkle topping evenly over the plums. Bake at 400° for 30 minutes, or until the fruit is tender and the topping is crisp and brown.
