Oatmeal Raisin Cookies

Serves 60

3/4 C low-calorie margarine
3/4 C sugar
3/4 C brown sugar
1 egg
1 egg white
1 tsp vanilla
1 C all-purpose flour
1/2 C whole-wheat flour
1 tsp baking soda
1 tsp cinnamon
3 C rolled oats
1 C raisins

Cream margarine and sugars until light and fluffy. Beat in eggs and vanilla. Combine flour, soda, and cinnamon; add to creamed mixture, beating well. Stir in oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets, making 60 cookies. Bake at 375° for 8 to 10 minutes. Store cooled cookies tightly covered or in the freezer.


  • Substitute currants, chopped dried apricots, or chopped dates for the raisins.
