Vietnamese Dipping Sauce*

Serves 10 to 12

1 C cold water
3/4 C + 2 T Vietnamese fish sauce
1/4 C sugar
1/4 C minced fresh cilantro
2 T rice wine vinegar
2 T very fine julienne carrot
2 large cloves of garlic, minced
2 jalapeño peppers, finely chopped
Juice of whole lime (unstrained)

Mix all ingredients. Serve with Seared Rare Peppered Tuna.


  • Vietnamese fish sauce is available in Oriental or specialty stores.
