Stuffed Acorn Squash

1 medium acorn squash, halved lengthwise and seeded
1 C unsweetened applesauce
2 tsp currants
1/4 tsp nutmeg

Place squash cut side down in baking dish. Pour in water to a depth of 1/2 inch. Bake at 350° until tender, about 30 minutes. Remove squash, discard water, and place squash cut side up in the same baking dish. Combine apple sauce, currants, and nutmeg; fill squash cavities. Continue baking at 350° for 20 to 30 minutes, or until hot and tender.
