Black Bean Relish*

Serves 12

3 C black beans, cleaned and soaked overnight in water to cover
1 C cooked white rice
1 C cooked corn, fresh or frozen
1 red bell pepper, seeded, diced
1 yellow bell pepper, seeded, diced
1 green bell pepper, seeded, diced
1 T diced red onion
3 I chopped cilantro
1 tomato, chopped
2 T olive oil
2 T sherry wine vinegar.
Pepper to taste

Drain the black beans and rinse well. Put them in a stockpot and add water to cover. Bring to a boil; reduce heat and simmer for about 1 hour. When tender, drain and rinse well under cold water. Mix black beans with remaining ingredients and season to taste with pepper. Serve chilled.
