Steamed Asparagus

Serves 4

2 1b fresh asparagus, cleaned and trimmed
1 C water
2 T lemon juice
Freshly ground black pepper to taste

Arrange asparagus in a microwave-safe 13 x 9-inch baking dish or in a round baking dish. Stems should be nearest the outside edges of the dish, with tips toward the center. In a rectangular dish, place half the asparagus in one direction and the other half in the opposite direction, with the tips in the center of the pan. On a round dish, arrange the asparagus like spokes in a wheel, with the tips meeting in the center.

Add water. Cover tightly and microwave on high for 4 minutes; turn the dish. Continue cooking for another 2 to 4 minutes, until the asparagus is crisp-tender. Do not overcook. Drain. Season with lemon juice and pepper.


  • Serve plain or with Mock Hollandaise (page 459) or use in recipes that call for cooked asparagus.
