Mock Sour Cream 1

Serving size: 1 T

1 C low-fat (1 %) cottage cheese
2 T lemon juice

Process cottage cheese and lemon juice in a blender until smooth. Store, tightly covered, in the refrigerator. Use as a topping or to replace sour cream in dishes that will not be heated or cooked. Makes 1 C.


  • If dry curd cottage cheese is used, add 1/4 C skim milk.
  • Add chives, parsley, or other herbs to taste.
  • Add chopped onion or garlic to taste.
  • Add finely chopped dried fruit to taste.
