Grilled Chicken Kabobs

Serves 4

2 T canola oil
1/3 C fresh lemon juice
1 tsp honey
Pinch of tarragon
Pinch of oregano
3 whole boneless, skinless chicken breasts, cut into 2-inch cubes
12 cherry tomatoes
8 oz fresh whole mushrooms
8 small whole onions, peeled
2 medium green peppers, quartered
1/2 fresh pineapple, cut into chunks

Mix oil, lemon juice, honey, tarragon, and oregano; pour over chicken and vegetables. Marinate in the refrigerator for 30 to 60 minutes. Thread chicken, vegetables, and fruit, alternating colors and flavors, on four long metal skewers. Grill or broil 4 to 6 inches from heat for about 25 to 30 minutes or until chicken is cooked, turning frequently and basting often with marinade.


  • Canned unsweetened pineapple chunks can be substituted for the fresh pineapple.
