Onion & Romaine Salad

Serves 4

2 T red wine vinegar
1 red onion, very thinly sliced and separated into rings
Freshly ground black pepper, to taste
2 T olive oil
2 T chopped fresh parsley
1 head romaine lettuce, cleaned, trimmed, and torn

Pour the vinegar over the onion rings and season with pepper. Cover and set aside at room temperature for 30 minutes. Toss the onions with oil and parsley. Add the romaine lettuce and toss thoroughly to coat leaves with dressing.

Serve immediately.


  • Sprinkle freshly grated Parmesan cheese on each serving.
