Frozen Banana Pops

Serves 12

3/4 C sugar
1/3 C water
1/2 tsp almond extract
1/3 C + 1 T unsweetened cocoa
1 T canola oil
6 bananas, peeled and cut crosswise in halves
12 ice cream sticks for handles

Combine sugar, water, and almond extract, stirring until sugar is dissolved.

Bring to a boil for 1 minute; remove from heat. Stir in cocoa and oil, mixing until well blended and thickened. Cool to room temperature.

Insert a wooden ice cream stick in the cut end of each banana half; freeze for 2 hours. Spread chocolate over each banana, using a knife to coat evenly (chocolate will freeze on contact with banana). Wrap each banana tightly in foil and freeze. Serve frozen.


  • Vanilla, orange, rum, or coconut extract may be substituted for the almond extract.
