Grilled Sourdough Bread with Tomatoes, Arugula, & Sweet Onions*

Serves 8

1 loaf sourdough bread, sliced
Olive oil cooking spray
4 medium plum tomatoes, diced fine
1 bunch arugula, chopped
1 medium sweet onion, diced fine
1/2 tsp chopped roasted garlic

Mix tomatoes, arugula, onion, and garlic; set aside. Spray sourdough bread slices with olive oil cooking spray. Grill slices of bread. Top bread with the tomato mixture just before serving.
