Pork Tenderloin Diable

Serves 4

1 lb pork tenderloin, trimmed of fat
Freshly ground black pepper to taste
1/3 C rice vinegar
1-1/2 T tupelo honey
2 to 3 tsp Jack Daniel’s Old No. 7 Mustard

Season tenderloin with pepper. Sear tenderloin on both sides over medium-high heat until browned, about 5 minutes each side. Place pork on a rack in a shallow roasting pan. Combine remaining ingredients and brush over tenderloin, reserving some for basting. Bake at 400° for 30 to 35 minutes, or until a meat thermometer inserted into the thickest part of the tenderloin reads 160°.

Baste often during cooking.
