Prune Bread

Serves 16

1-1/2 C whole-wheat flour
1/2 C brown sugar
1-1/2 tsp cinnamon
1 C chopped pitted prunes
2 T chopped pecans
1 tsp baking soda
1 C skim milk
1 egg white

Mix flour, sugar, cinnamon, prunes, and pecans. Stir soda into milk. Stir milk and egg white into dry ingredients. Pour into a nonstick bread pan and let stand for 20 minutes. Bake at 350° for 50 minutes. Cool bread in the pan on a cooling rack; remove when completely cool.


• Add 1 to 2 tsp grated orange or lemon rind to dry ingredients.
