Angel Food Cake

Serves 12

1 C cake flour, sifted
1 C sugar
1/4 tsp salt
10 egg whites
1 tsp cream of tartar
1/2 tsp vanilla extract
1/4 tsp almond extract

Mix flour with sugar and salt. Set aside. Beat egg whites until foamy; add cream of tartar and continue to beat until stiff but not dry peaks form. Gently fold in flour mixture, vanilla, and almond. Pour batter into an ungreased tube pan. Bake at 375° for about 45 minutes, or until the cake springs back lightly when touched. Invert the pan on a rack. Cool completely in the pan before removing.


  • Serve with fresh raspberries, strawberries, or diced peaches and Melba Sauce.
