Orange-Pineapple Yams

Serves 6

1 lb yams, cooked, peeled, and mashed
1-2 T unsweetened frozen orange juice concentrate
1/2 tsp grated orange rind
3/4 C canned unsweetened crushed pineapple
1/2 C unsweetened pineapple juice
Pinch of cinnamon, cloves, and allspice
1-1/2 C miniature marshmallows

Mix yams with all ingredients, except marshmallows, blending well. Lightly pile mixture in a casserole dish. Bake at 350° for 10 to 15 minutes, until hot.

Top with marshmallows and broil just until golden brown; do not burn.


  • Sweet potatoes may be substituted for the yams.
