Caribbean Cod Salad

Serves 6

1/2 1b fresh cod, steamed and flaked
3 tomatoes, chopped
2 medium Bermuda onions, finely chopped
1/2 green bell pepper, diced
1/2 red bell pepper, diced
2 tsp olive oil
Juice of 1 lime
2 tsp Tabasco sauce
2 T minced fresh parsley
Freshly ground black pepper

Mix all ingredients wel; cover tightly and refrigerate for 4 hours or overnight. Remove from refrigerator 1 hour before serving. Makes 6 C.


  • Serve over crisp salad greens, on bread as a sandwich, or stuffed in pita pockets.
  • For 24 appetizers, make half the recipe; serve with unsalted crackers.
