Fresh Tomato Pizzas

Serves 4

4 whole-wheat pita breads
4 small tomatoes, thinly sliced
1 green bell pepper, thinly sliced
1/4 pound raw mushrooms, thinly sliced
1/2 tsp oregano
1/2 tsp basil
1-1/3 C part-skim mozzarella cheese, grated

Place pitas on a large baking sheet. Cover each with tomatoes, bell peppers, and mushrooms. Sprinkle with herbs. Top with cheese. Bake at 375° for 15 minutes or until cheese is melted. Serve immediately.


  • Use other sliced vegetables to replace part or all of the bell pepper and mushrooms, such as zucchini, onions, chili peppers, or elephant garlic.
