Lobster & Grapefruit Salad

Serves 4

3 lobster tails (8 oz each), cooked, cleaned, and cut in bite-size pieces
1 medium pink grapefruit, peeled and sectioned
1 medium orange, peeled and sectioned
1/2 C plain low-fat yogurt
3 T unsweetened orange juice
1 T fresh lemon juice
1 tsp grated orange rind
1 tsp grated lime rind
1/8 tsp ground white pepper
4 C torn fresh spinach leaves

Mix lobster, grapefruit sections, and orange sections. Blend yogurt, juices, rinds, and pepper. Pour over lobster and toss well. Serve on beds of spinach.
