Banana Muffins

Serves 12

2-1/4 C oat bran
2 tsp baking powder
1/4 tsp cinnamon
1 ripe banana, mashed
3/4 C skim milk
4 egg whites
2 T canola oil
1/3 C orange blossom honey
1/4 C raisins

Combine oat bran, baking powder, and cinnamon. Mix banana, milk, egg whites, oil, honey, and raisins. Add to dry ingredients, stirring just until moistened. Pour equal amounts of batter into 12 muffin cups prepared with paper liners. Bake at 425° for 15 to 18 minutes or until a toothpick inserted in the center of a muffin comes out dry.


• Chopped dried apples can be added with the raisins.
