Hash-Browned Potatoes

Serves 4

3 medium unpeeled baking potatoes, cooked and coarsely grated
2 T finely chopped onion
Freshly ground black pepper to taste
2 tsp canola oil

Mix potatoes, onion, and pepper in a large bowl. Heat oil in a non-stick skillet over medium-high heat. Spread potatoes across the bottom of the skillet and reduce heat to medium-low. Cook, covered, until potatoes are brown on the bottom. Turn potato cake over and brown the other side. Serve hot.


  • Minced garlic or other seasonings to taste can be mixed in with the grated potatoes before cooking.
