Baked Marinated Cauliflower

Serves 8

2 T lemon juice
1/2 C unsweetened orange juice
2 tsp olive oil
2 cloves garlic, minced
1 T mixed fresh herbs, finely chopped
2 tsp sesame seeds
1 C cauliflower florets
1 C fresh button mushroom caps
1/2 C julienned bell pepper
1/2 C zucchini, quartered
8 small new potatoes, quartered and parboiled

Mix lemon juice, orange juice, oil, garlic, herbs, and sesame seeds. Pour the marinade over the vegetables. Marinate for 1 to 2 hours. Place in a casserole or baking pan just large enough to hold the vegetables. Bake, covered, at 425° for 20 to 30 minutes. Serve hot.


  • Broccoflower can be substituted for the cauliflower.
