Squash Ratatouille

Serves 8

2 large yellow onions, sliced
3 cloves garlic, chopped
6 medium yellow squash, sliced
6 medium zucchini, sliced
1/2 C cilantro, chopped
1/4 to 1/2 tsp red chili powder
Freshly ground black pepper to taste

Sauté the onions and garlic for 6 to 8 minutes, or until the onions are translucent. Add remaining ingredients. Cook, covered, over medium-low heat, stirring frequently, for 30 minutes, or until the ratatouille is the consistency of a thick stew. Season with pepper before serving.
