Braised Seasonal Salmon with Shiitake Mushrooms*

Serves 4

4 salmon fillet (6 oz each)
1 C sliced shiitake mushrooms
2 T chopped shallots
3 oz white wine
1 C fish glace
1 C skim milk
4 scallions
Freshly ground black pepper to taste

Poach salmon with sliced shiitakes and chopped shallots in wine and fish glace. Remove salmon; add skim milk to cooking pan and reduce. Pour over salmon. Garnish with scallions and black pepper.
