Tabbouleh

Serves 8

3/4 C cracked wheat, soaked in 1-1/2 C water and drained
2 to 3 bunches fresh parsley, stems removed, chopped
3/4 C chopped fresh mint, stems removed, chopped
1 large onion, finely diced
2 medium tomatoes, diced
1-1/2 T olive oil
Juice of 1 lemon
1/2 tsp ground cinnamon
1/2 tsp pepper
2 heads romaine lettuce, cleaned and separated

Mix cracked wheat, parsley, mint, onions, and tomatoes. Add oil, lemon juice, and seasonings, tossing lightly. Serve over lettuce leaves.
